The Best Ketogenic-Friendly Superfood Recipes

The ketogenic diet, which took off in popularity in 2017, involves consuming foods that prompt your body to enter what is called “ketosis,” a state of being that makes it easier to burn fat and, in turn, lose weight. Some of the most common foods consumed as part of the ketogenic diet include natural fats like butters and oils, meat, fish and seafood, eggs, cheese, certain vegetables, and some berries. In addition to eating these foods, individuals following a ketogenic diet should avoid sugary, processed foods, grains and starches, most fruit, beans and legumes, root vegetables, and alcohol.

For example, many people choose to follow a ketogenic diet for increased mental focus, diabetes support, reduced acne, and gut health. Superfood Keto Soup

Ingredients:

  • 1 medium head cauliflower
  • 1 medium white onion
  • 2 cloves garlic
  • 1 bay leaf, crumbled
  • 5 oz. watercress
  • 7 oz. fresh spinach or frozen spinach
  • 4 cups vegetable stock or bone broth or chicken stock
  • 1 cup coconut milk + 6 tbsp for garnish
  • ¼ cup coconut oil
  • 1 tsp salt or to taste
  • freshly ground black pepper
  • Optional: fresh herbs such as parsley or chives for garnish

Directions:

  1. Peel and finely dice the onion and garlic. Place in a soup pot or a Dutch oven greased with ghee and cook over a medium-high heat until slightly browned. Wash the spinach and watercress and set aside.
  2. Cut the cauliflower into small florets and place in the pot with browned onion. Add crumbled bay leaf. Cook for about 5 minutes and mix frequently.
  3. Add the spinach and watercress and cook until wilted for just about 2-3 minutes.
  4. Pour in the vegetable stock and bring to a boil. Cook until the cauliflower is crisp-tender and pour in the coconut milk.
  5. Season with salt and pepper. Take off the heat and using a hand blender, pulse until smooth and creamy.
  6. Serve immediately or chill and keep refrigerated for up to 5 days. Freeze for longer. Just before serving, drizzle some coconut milk on top.

Directions:

  1. In a small pot combine the coconut milk, cacao powder, sugar, cacao nibs, and a pinch of salt. Melt together over medium-low heat. Set aside to cool.
  2. Carefully pour the cooled mixture in 6 popsicle molds and freeze 4-6 hours until solid. When frozen remove from the molds and place on a parchment lined baking sheet.
  3. In a small pot over medium low heat melt the coconut oil, cacao powder, and sugar together. Drizzle over the popsicles one at a time and top with your desired toppings.The drizzle hardens fast so work quickly and one at a time.
  4. Once all of the popsicles have been topped transfer to a large lidded container with parchment between layers of the popsicles. Store in the freezer until ready to eat.
