The Perfect Goji + Veggie Wraps for a Picnic

With Memorial Day Weekend on the horizon, we thought we’d share one of our favorite recipes for the best summer activity: picnics! Instead of bringing the usual burgers and chips, mix it up with these deliciously unique chickpea wraps.

The goji berries pack a punch against a wide spectrum of health concerns, as one of the most powerful antioxidants on the planet! They can help fight degenerative diseases like premature aging, support immune system and liver function, and strengthen bones and muscles.

The cashew butter is naturally high in essential amino acids, copper, manganese and magnesium. It's also a good source of phosphorus, vitamin K, zinc and healthy fats to keep your heart and blood vessels healthy.

Ingredients:

  • 1 cup Raw Goji Berries
  • 3 tbsp Raw Cashew Butter
  • 5 cups chickpeas, cooked
  • 1 tbsp sumac
  • 4 mini cucumbers, diced
  • 2 tomatoes, diced
  • 1 bunch parsley, chopped
  • 1/2 red onion, chopped
  • 1 avocado, sliced
  • 1 lemon, juiced
  • 10 wraps of choice such as lettuce, cabbage, tortilla, etc.

Directions:

  1. Combine the chopped cucumbers, tomatoes, parsley, cooked chickpeas and onion in a large bowl.
  2. Add the goji berries, lemon juice and sumac and toss gently.
  3. Line each wrap with 1 tsp of cashew butter and a few avocado slices
  4. Fill each wrap with some of the mixture and roll into a wrap. Use a toothpick to secure into place.
