Halloween can be pretty scary - and we’re not talking about ghouls and goblins. For us, the truly spooky part is all those sugary treats lining the supermarket aisles!
While it can be fun to indulge in delicious treats and take part in the celebrating, who says we can’t have some healthy Halloween fun? Here are a few recipes to make your holiday spooktacularly healthy!
The Sludge Monster Mocktini
- In a blender or food processor, combine all ingredients.
- Pour the green mixture into a shaker over ice.
- Shake and pour into a martini glass to serve.
Almond Butter Pumpkins
- 1/2 cup Raw Almond Butter
- Melt the almond butter and honey together in a small microwavable bowl until easily stirred. Mix until well blended.
- In another bowl, combine oats and flax. Pour the almond butter mixture into the oat mixture and mix together.
- Form the now combined mixture into balls and place on a plate. Chill in freezer overnight.
- Once hardened, place a cacao nib on top of each ball to make into a pumpkin. Return balls to freezer until serving time.
Healthy Homemade Almond Joy Candies
- 1 1/2 cups shredded unsweetened coconut
- 6 dates
- 15 almonds
- 1/2 cup Cacao Nibs
- Combine dates and coconut in a food processor until slightly sticky, then scoop tablespoons of the mixture onto a small cutting board lined with wax or parchment paper, forming into a dome-shaped rounded rectangle.
- Press an almond into the center of each mound, then freeze for 20 minutes.
- While the bars are firming up, melt the cacao nibs in a small pan. Then, take the coconut-almond bars out of the freezer and use a spoon to spread melted chocolate on the tops and sides.
- Finally, pop them back in the freezer for another 20 to firm up, and store leftovers in an airtight container in the fridge. These ones make for a great trick-or-treat option!
